2011 was an unusual year in Chile for the Casillero del Diablo Shiraz Red Wine. The 2010 dryness finally ended, leading into a cooler than normal growing season. For Shiraz, slower development means deep, rich, intense flavours while still maintaining excellent balance and acidity. The fragrances of cocoa, warm spice and dark fruit are very compelling from the first sniff. In the mouth, the Shiraz wine is, layered with rich blackberry, hints of dark, creamy chocolate ganache and dark cherries. The finish trails on, hanging on to your tongue while the fruit and spice characteristics slowly change and fade.
